Fish Bake

Here you are, our Sunday lunch today.

Ingredients (for 2)
* 350gr of white fish fillets (e.g. tilapia, mahi-mahi, orange roughy etc)
* 2 tbspoons of dried bread crumbs
* 2 large potatoes
* 2 large tomatoes
* 2 shallots
* oregano
* olive oil
* salt & pepper

Execution
1. Finely chop the shallots (or onion) and sprinkle it in the bake dish.
2. Wash the fish carefully and lay it rest on the bake dish.
3. Peel the potatoes. Cut them horizontally, so they look like ‘thin round chips’. Layer them on top of the bake dish to cover the fish.
4. Wash and cut the tomatoes the same way as the potatoes above and layer them on top of the potatoes.
5. Sprinkle with salt, pepper and some good amounts of oregano and olive oil.
6. Sprinkle the bread crumbs on top of the tomatoes. Pour 3/4 cups of warm water in the bake dish.
7. Bake in a pre-heated oven at 400F (205C) for over 1 hour (until the potatoes are done and there isn’t lots of juice left). Serve hot and enjoy.
