French dressing for salads

Here is my husband’s home made french dressing for salads (greens, tomatoes, cucumber etc):

(makes dressing for two people)
* 2 full tablespoons of olive oil
* 1 full tablespoon red wine vinegar
* 1/5 (or 1/4) tablespoon Dijon mustard
* salt
* pepper

Mix them all together well with a fork until they become “one”.

When you are ready to have the salad (and not before, because this dressing is “burning out” the vegetables after a few minutes it comes in contact with them), add the washed and cut lettuce, or the sliced tomatoes and cucumber. Mix well with the dressing.
Serve.

home sick

I miss my place, in Greece. Tonight I learned that my small town that my parents currently live in has a web site.

The feeling that strikes me because of this is that I am not there to witness the internet booming that’s happening in that place atm. I am not there to witness the advances they make.

It is a lot like having a child and not being able to watch it growing up, and that hurts.
